HISTORY

It's always fun seeing our frozen cranberries in action! We sent quite a few micro-influencers bags of frozen cranberries in 2023 to see what they could whip up. This recipe stuck out to us as easy to follow, tasty to eat, and it looks great too so it now lives here on our website! This Cranberry Crumble Bar recipe was made by Hannah of @bitesofjupiter. She shares a lot of healthier recipes focusing on intentional ingredients and building a healthier gut. No wonder cranberries were easy for her to work with! 

RECIPE

Ingredients

Base:

  • 1 cup almond flour 
  • 1 cup spelt
  •  tbsp butter, melted
  • 2/3 cup coconut sugar

Cranberry Layer

  • 1 bag frozen cranberries (do not thaw!)
  • 1/4 cup OJ
  • 1/4 cup arrowroot
  • 1/4 cup honey 

Oat Topping

  • 1 cup oats
  • 1/4 cup honey (melted in microwave for 15 seconds makes it easier to mix)


Base:

  • In a bowl, add all base ingredients and mix until completely incorporated. You should end up with a semi wet texture. 
  • Line a small baking dish (used a 8x10 Pyrex) and press mixture down evenly. 

Cranberry Layer:

  • In a bowl, add frozen cranberries and arrowroot. Mix. Then add orange juice and honey and mix again. 
  • Pour cranberry mixture on top of base and spread it out evenly.

Topping:

  • In a small bowl, combine oats and honey. Sprinkle on top evenly. 

 

  • Bake 350 on the middle rack for about 40-45 min.
  • It should be a little soft when it comes out of the oven. It will harden up to a sliceable consistency when cooled, so cool completely before attempting to slice into bars!
  • Store in the fridge and enjoy this healthier, delicious take on a cranberry bar
