Cranberry Lemon Muffins

½ cup melted butter
½ cup sugar
1 egg
1 cup milk
1¾ cups flour
3 tsp baking powder
½ tsp salt
2 Tbsp finely grated lemon rind
1 cup Cape Cod Select cranberries (fresh or frozen)

In large bowl, mix together first butter, sugar, egg and milk. In a separate bowl, combine remaining ingredients. Add the dry ingredients to the first bowl, stirring just until moistened. Fill greased muffin tins and bake at 325 F for 10 to 12 minutes. Makes 10 large muffins. Enjoy!
